D'un point de vue historique, cet établissement fut construit en 1852 selon les plans du célèbre architecte William Playfair qui dessina aussi le tout proche Donaldsons' Collège pour les sourds. Originellement connue sous le nom de villa Dunstane. Cet hôtel fut la résidence particulière de la famille Ross, célèbres pour leur Edimbourg castle Rocks et leur confections produites en Ecosse. D'ailleurs, les environs des jardins de Princes street tirent leur nom de cette famille. Notre hôtel a conservé sa superbe architecture de style Victorien, la combinant à l'atmosphère intimiste d'une maison de campagne, pour s'assurer que nos visiteurs quitteront l'hôtel avec un souvenir de Dunstane inoubliable. Au surplus, les nombreux ornements médiévaux donnent à l'hôtel des airs de forteresse.
